Oven Pancake

  • 3 tablespoons butter
  • 3 eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 6 tablespoons brown rice flour (or whole wheat flour)
  • 1 tablespoon arrowroot flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon sea salt
  • 1 apple, peach or other seasonal fruit
  • cinnamon, nutmeg, or other desired spices (opt.)

Preheat oven to 475F.  Put 9 inch pie plate with butter in oven to melt butter.  Beat eggs  in medium sized bowl and whisk in milk and vanilla.  Mix dry ingredients together, and add to wet.  Slice fruit and place in pie plate.  Pour batter over fruit and bake for 10 minutes.
