Coconut Oatmeal Cookies

  • 2/3 cup coconut butter or butter
  • 1 cup muscovado sugar
  • 1 tablespoon ground flaxseed
  • 1 1/4 whole wheat flour
  • 1 cup rolled oats
  • 3/4 cup dried coconut
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cup raisins

Cream butter and sugar together.  In a separate bowl combine flax, flour, oats, coconut, baking powder and baking soda.  Add dry ingredients to butter mixture and mix well.  Stir in raisins.  Drop by spoonfuls onto lightly greased baking sheets.  Flatten slightly with a floured fork.  Bake at 350F for 10-13 minutes, until light golden.

Makes 24 cookies.
