- 1 lb lean ground meat
- 1/2 c onions, chopped
- 2 cloves garlic, minced
- 1/2 c celery, chopped
- 1/4 carrots, grated
- 1 c romano or pinto beans, cooked and mashed
- 1 c brown rice, cooked
- 1 c diced tomato
- 2/3 c ketchup
- 1/2 cup green onions, chopped
- 2 jalapenos, seeded and minced, optional
- 2 Tbsp vinegar
- 1 tbsp worcestershire sauce
- 1 tbsp brown sugar
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp mustard
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp pepper
- hamburger rolls or kaiser buns
Brown meat and cook onions, garlic, celery and carrot over med-hi heat until tender, about 8 minutes. Stir often. Drain off fat.
Stir in remaining ingredients. Reduce heat to med-lo. Cover and simmer about 10 minutes, stirring occasionally. Spoon mixture over bottom half of hamburger bun, cover with top half, and enjoy!
